Morning Miso #9

A bowl of miso soup just seems the perfect start to a cold fall morning. Its intrinsically nourishing qualities ground us in preparation of seizing the day. Make yours to please your palate with any organic locally grown vegetables that are currently in season.

sample recipe:
3 cups water
1-3 tbsp miso (to your liking)
chopped yellow squash
Red Russian kale
chopped scallion

Start with 1/2 cup or so of water in a small pot with vegetables and cook on medium heat until the vegetables start to become tender. Add remaining water and bring to boil. Turn off heat and let cool a couple minutes before adding miso. Stir in miso a little at a time and taste, until the flavor is right for you.

Enjoy it alone, or with its traditional accompaniment, rice.

Spelt & Flax Oatmeal Cookies

Looking for something sweet, quick and delicious to whip up tonight for the Super Bowl? These Spelt & Flax Oatmeal Cookies are just the thing. Totally free from animal products, these cookies don’t skimp on flavor and take only a matter of minutes to make.

I recommend using organic ingredients.

Here’s what you’ll need:
1 cup oatmeal
1 cup spelt flour
1/2 cup sugar
2 tsp baking powder
1 tsp baking soda
1 tbsp flax seed
1/4 tsp fine sea salt
1/2 cup oil
1 tsp vanilla extract
1 tsp cinnamon
1/2 cup water

1) Preheat oven to 350 degrees F.
2) In bowl combine oats, flour, sugar, cinnamon, baking powder, baking soda, salt, and flax seed. Mix together with fork.
3) In separate small bowl combine oil and vanilla.
4) Pour wet ingredients into dry ingredients and mix with wooden spoon. Add water slowly until the mixture sticks enough to form into balls. (You might not have to use the full 1/2 cup.)
5) Grease cookie sheet and form dough into balls approximately a tablespoon in size. Place on cookie sheet and flatten tops.

Bake at 350 degrees F for approximately 8-15 minutes.

Makes about 12 cookies. Yum!
