Sunflower Balsamic Sandwich

 

ingredients*

2 slices of bread+

sunflower seed butter^

2 raw white button mushrooms, sliced

balsamic vinegar

extra-virgin olive oil

Romaine lettuce (a few crisp leaves)

sea salt, to taste

 

directions  Spread sunflower seed butter on one of your bread slices and sprinkle with a little sea salt to taste, if your sunflower seed butter is unsalted.  Drizzle balsamic vinegar & a little olive oil on other slice and top with the sliced mushrooms.  Top with lettuce, and place sunflower seed butter slice on top.  Serve with an extra side of balsamic for dipping, if you like!

+I recommend a locally baked artisan bread.  I used organic 9-Grain (an organic sourdough) from Flat Rock Village Bakery in Flat Rock, NC.

^I used Yumbutter Organic Superfood Sunflower Butter (its added ingredients include ground chia seeds, hemp seeds, goji berry powder, and other “superfoods”)– but plain sunflower butter will do just as well.
